【📝Brief intro】
🇫🇷 The Domaine de l'Enclos owns 29 hectares of vines in organic farming (Ecocert certification) on the 4 levels of the Chablis appellation. The estate is run by 2 brothers, Romain and Damien, they attach great importance to the soil life and seek to prevent the vines from disease by only using products of natural origin, copper, sulfur and plant preparations.
The grapes for this wine come from a parcel of 2.77ha, after hand harvesting and a careful selection at the estate the vinification is done without input, no sulfur, using native yeasts in either oak barrel or stainless steel vat. The aging is carried out in both vats and barrels with an 18 months lees aging including a malolactic fermentation. The wines are not fined, only a light filtration and a moderate addition of sulfur (SO2) is carried out before bottling.

【👀To the eye】
Pale golden.
【👃Nose】
Pronounced aromas of lemon, yellow apple, pear, peach, apricot, acacia, honeysuckle, wet stone, butter, cream and toast.
【👅Palate】
Pronounced aromas similar to the nose, primary aromas of citrus, green and stone fruits flavor along with floral notes and a touch of minerality, secondary aromas from lees aging and malolactic conversion.
Dry, high alcohol, high acidity, medium body. Aromas are pronounced and complex, alcohol is high but well-integrated thanks to the pronounced aromas and the refreshing acidity, wine is balanced, with a very smooth texture, very round mouthfeel, ending in a long mineral finish which reminds us it’s a Chablis.
【🍷 Conclusion】
Just delicious Chablis, a modern approach of it, very fruit-forward, complex and ripe, smooth and dense on the palate, just enough minerality, already ready to drink. Highly recommended.
